Fully fitted out in gourmet chefs’ uniforms, the ladies of the group, “Club for Lovers of Food and Life” were ready to hit the kitchen for a World-class Turkish cooking class.

The cooking club, formally referred to as, The Club des Gourmands & Bons Vivants, was initiated by Cecile Malet-Peterson. Cecile hails from France and is an avid chef. She is also an avid traveler, and after her many years abroad, she took note of the connection between food and its ability to bring people together. She started the group three years ago as a way for expatriates to experience fresh, local ingredients, and to connect over food.



The club meets once per month. Each cooking class centers on a chosen theme with past themes including Mexican and Pakistan cuisine. Each class features 2-3 side dishes and a main dish.

In addition to the monthly cooking course, the group also enjoys educational food trips around the city to track down fresh herbs and cheeses.

Since one cannot fully experience Ankara without tasting the many delicious Turkish dishes, it is only fitting that the focus of this weeks class   would be on Turkish cuisine. On the menu were four traditional dishes:  börek pastries, eggplant salad, köfte, and lamb and bean soup.

To begin the class, we split up into groups of five persons and made our way to a station with a cutting board and an array of knives. Ibrahim, the Executive Chef at the Swissotel, and his team then took the stage to show the group the basics for creating each dish. It was an eye opening experience to witness the teams' impeccable knife skills. (An onion that would take me 5 minutes to chop was chopped by Ibrahim in an effortless 20 seconds!)

Midway through Ibrahim’s instruction, we completed certain tasks (such as peeling red peppers, creating köfte patties, and rolling börek pastries) to contribute to each dish.  After two hours of cooking, Cecile directed us to the dining room for lunch. 

The table was elegantly decorated, and our sides of eggplant salad, soup, and böreks were laid out nicely on each plate. We found our seats and enjoyed a few glasses of wine until Ibrahim and his team appeared with the köfte patties.

After lunch, we gathered together for a group photo and received a certificate of completion.

Köfte (for 4 persons)

Ingredients
-300 grams lean ground beef
-3 tablespoons bread crumbs
-1 medium onion (grated)
-1 teaspoon cumin powder
-1 teaspoon black pepper powder
-30 grams garlic minced
-1/2 bunch parsley
-1 teaspoon salt

Directions
1. Mix all of the ingredients together in a bowl.
2. Kneed for 3-4 minutes to form a stiff mixture.
3. Cover it and leave in the refrigerator overnight.
4. The following day, make finger shapes, balls, or patties out of mixture.
5. Shallow fry in a skillet or grill.
